I see Rapunzel as being a modern-day art student in a big city where she can be around lots of people. She paints, makes and alters her own clothes, and loves reading about the history of fashion. She loves throwing theme parties so she can see everyone dressed up in costume, and if anyone doesn't have something to wear, Rapunzel somehow always has something in just their size. On the weekends, she likes visiting museums, barefoot hiking, and volunteering at a children's science/conservation center, so she can share her love of unusual plants, lizards, insects, and other critters that adults might consider slimy or repulsive.
